Yes. If capturing a particular piece is the only legal answer to a check, no other capture, block or escape square exists, the general must take it, even if that piece is defended and the general is simply recaptured immediately afterward. A move being the only legal option overrides whether it is actually a good one.
Why this is a real attacking resource
An attacker can sometimes deliberately offer a defended piece next to the general specifically because it removes the general's only other escape, knowing the general will be forced to take it and then be captured in turn. It is a way of trading a lesser piece to expose the general on a worse square than it started on.
Recognising the danger in advance
Before allowing your general to be checked with only one legal reply, check what that reply actually costs. A check that looks easily answered can be forcing you into a recapture that leaves the general somewhere considerably more exposed than where it started.
